Tzatziki sauce - to be used as a raw veggie dip

Asparagus - sauteed in butter served in a sauce of Dijon Mustard and lemon juice

Sauteed Kale with capers

Oven Roasted Root Vegetables - Turnips, Parsnips, Rutabagas and Onions

And, tomorrow:

Polenta with Basil
